
Scialatielli pasta
with Shrimp and Zucchini
Ingredients for 4
people: 400 gr.
scialatielli - 150 gr. zucchini - 250 gr. shrimp - white wine - salt,
pepper, olive oil, celery, garlic.
The Scialatielli:
make a dough with 250 gr. of type 0 (fine) flour and 100 gr. of type
00 flour (very fine), an egg, 1/4 of liter of milk, basil, salt, and
pepper. The dough has to be 5 mm thick and has to be cut into rectangular
pieces (5-6 cm length and 1-2 cm width). Cook in boiling water for 10
minutes.
The sauce:
cut zucchini and fry in a pan with garlic, olive oil, celery, salt,
and pepper. Add shrimp, and white wine, and cook for 3 minutes. Add
scialatielli that you previously cooked and stir.
